Rawon


Ingredients:

600 gram daging sapi // 600 beef (aku pake yg berlemak sedikit)
4 butir bawang merah, iris tipis // 4 shallots, finely sliced
4 lembar daun jeruk purut // 4 lime kaffir leaves
1 batang serai, memarkan // 1 lemongrass, bruised
1 cm lengkuas, memarkan // 1 cm galangal, bruised
2 batang daun bawang, potong 2cm // 2 green onions, cut into 2 cm length
2.5 liter air // 2.5 litter
garam dan gula secukupnya // salt and sygar as desired

Haluskan // Puree /Grind:
6 buah kluwek kupas, rendam dalam 1/2 cup air // 6 peeled black nuts, soak in 1/2 cup water (bisa dikurangin kalo nggak mau terlalu hitam)
5 butir bawang merah // 5 shallots
3 siung bawang putih // 3 garlics
1 cm jahe // 1 ginger
1/2 sdt kunyit bubuk // 1/2 tsp ground turmeric (aku pake yg seger)
1 1/2 sdt ketumbar // 1 1/2 tsp corriander seed
1/2 tsp lada bubuk // 1/2 tsp ground white pepper
garam secukupnya // salt as desired

Pelengkap // Sides Dishes and Condiments:
Nasi putih // Steamed rice
Taoge pendek // Short bean sprouts
Kerupuk udang // Shrimp crackers
Sambel terasi // Sambal terasi
Tempe Goreng // Deep fried tempeh
Telur asin// boiled salted duck egg



Directions:

Bahasa Indonesia
1. Tumis bawang merah dengan sedikit minyak sampai harum
2. Tambahkan bumbu halus, daun jeruk, batang serai dan lengkuas. Tumis sampai bumbu matang.
3. Masukkan daging sapi-nya, masak sampai berubah warna. Masukkan air. Masak sampai mendidih, masukkan irisan daun bawang. Masak sampai daging empuk.

Hidangkan dengan pelengkap.

PS
Untuk proses pematangan lebih cepat bisa digunakan pressure cooker, dengan cara merebusnya kemudian inapkan semalam angkat lemak yang mengapung. Baru dimasak keesokan harinya.

1. Stir fry sliced shallots in a small amount of cooking oil untill fragrant. 
2. Add ground spices, lime kaffir leaves, lemongrass and galangal. Stir fry until all the spices cooked. 
3. Add beef, sear the meat until no longer pink. Add water, bring to a boil and add sliced green onions. Turn to low medium heat, let it simmer until the meat is tender. Remove from heat and Serve with side dishes and condiments.

Hints:
To tenderize beef oxtail quicker, boil the oxtail with a pressure cooker.
