Kwetiaw goreng


Ingredients:


Kwetiauw seger 
Sawi ijo, dipotong2
Telor ayam
Fish cake, dipotong2 (bisa diganti pake bakso ikan dll)

Bumbu :
Bawang bombay, dipotong memanjang
Bawang putih, cincang halus
Garem
Merica
Kecap manis
Kecap asin
Oyster sauce 
Minyak goreng 

Directions:
Panaskan minyak, tumis bawang bombay dan bawang putih sampe wangi, Ceplokin telor ayam terus diaduk2, lalu masukin fish cake-nya aduk2 lagi.
Kemudian masukin sawi, aduk2 sesekali sampe sawi-nya agak layu.
Terakhir masukin kwetiauw-nya.
Balikin sawi dan yang lain2nya supaya kwei tiaw-nya berada dipaling bawah dan biarkan sebentar (jangan diaduk2 dulu) --> maksudnya biar kwei tiaw-nya agak gosong dikit spt yg dijual si abang2.
Masukin kecap manis, kecap asin, garam dan merica, aduk2 lagi sampe rata. Angkat dan siap dihidangkan panas2.


Kwetiaw goreng siram capcay


Ingredients:

Bahan utama :
1 porsi kwetiauw segar
minyak goreng secukupnya

Untuk capcay (aku pake yg ada dilemari es qtt-nya dikira2 banget)
Sawi ijo, dipotong kira2 3cm
Kol, dipotong kasar
Wortel, dipotong menyerong tipis 
Jamur shitake kering, rendam dlm air, iris kecil2
Batang celery. potong menyerong
Udang, kupas kulitnya.
Bakso ikan, dipotong2

Bumbu :
Garam dan merica, secukupnya
4 siung bawang putih, dicincang halus
1 buah bawang bombay, dirajang kasar
Kaldu blok rasa ayam.
1 sdt tepung maizena, dilarutkan dlm sedikit air dingin.
MInyak goreng untuk menumis secukupnya.
Air panas secukupnya.

Directions:
Panaskan minyak, tumis bawang putih sampai wangi, masukan bawang bombay, aduk sebentar, masukan udang dan bakso ikan, aduk2 sampe udangnya berubah warna.
Masukan sayuran yg agak lama matengnya, disusul dengan sayuran yg cepet mateng.
Masukan garam, merica dan kaldu blok.
Siram air panas, aduk2 sebentar.
Begitu mendidih masukan larutan maizena, aduk rata. Angkat, sisihkan.



Untuk kwetiauw-nya:

Panaskan minyak di wajan anti lengket yg permukaannya rata. Tunggu sampe minyaknya panas betul.
Goreng kwetiauw dan jangan dulu dibalik sampe bagian bawahnya agak kering, balikan supaya permukaan atasnya juga mateng dan agak kering. Kalo agak susah gunakan dua buah spatulla.
Angkat, siapkan dalam piring saji, potong2 kwetiauw spt motong sandwich (posisi-nya jangan dirubah, supaya tetep flat). Lalu siram dengan capcay kuah. Hidangkan panas2.

Pad Thai


Ingredients:



250 gr thai rice noodles

2 tbsp cooking oil
150 gr chicken breast, thinly sliced (shrimp is optional)
100 gr fried tofu, chopped into a little cubes
3 stalks garlic chive (I used green onion)
2 eggs
1 cup bean sprouts
cilantro for garnish
1/2 cup roasted peanuts, chopped

For seasonings :
3 cloves garlic, minced
2 tbsp Thai bird chili, seeded then thinly sliced
2 tbsp fish sauce
2 tbsp lime juice
2 tsp brown sugar
salt,to taste


Directions:
Soak the rice noodles in lukewarm water for about 10 minues or until soft, discharge the water, set aside.
Heat the cooking oil until really HOT, add garlic, chili and chicken, stir for 2 minutes. Add eggs, and keep stirring until the egg is cooked.
Add the tofu, stir and cook again for about 2-3 minutes. Add in some chives and rice noodles, cover the wok for a quick short while and let it cook for about 1 minute.
Add some fish sauce, lime juice and brown sugar, keep stirring to make sure all the noodles got seasoned. Lastly add the bean sprouts, stir quickly and take from the heat. Put in a serving plate and put some cilantro and roasted peanuts. To be served hot.
